Lomo saltado (serving for 3-4)

**Prep all the ingredients for a smooth cooking experience**

Skirt steak.       20 oz (sliced against the grain)

Onion.             1 med Julianne

Red pepper.        1 small/Julianne

Green pepper.      1 small /Julianne

Tomato plum.       3 med cut into wedges

Garlic.            3 cloves sliced

Jalapeno.          1 small / thin coin sliced (reserve a few for garnish)

Potatoes.          3 large (fries)

Soy reduction.     1/2 cup

Red wine vinegar   3 tsp

Cumin.             1 tsp (ground)

Coriander.         1 tsp (ground)

Potatoes (fries)

1.  Pre heat the oven at 400 degrees

2.  Cut potatoes into fries’ sticks

3.  Place fries on sheet tray with a layer of parchment paper

4.  Add canola oil, salt and black pepper

5.  Put fries in oven and bake for 20 mins.

Soy reduction

Sauce soy low sodium.     1 cup

Tamari.                   1/2 cup

Allspice.                 5 pieces

Star anise.               2 pieces

Ginger.                   2 oz sliced

Black peppercorn.         5 pieces

Sugar.                    1/2 cup

Add together in a small pot on medium heat and reduce by half. Strain and discard spices.

    

Garnish

Cilantro.                  20 leaves

Jalapeno.                  20 sliced coin

Pimento Verde sauce

Cubanelle pepper.          Half

Cilantro.                  Half bunch

Garlic.                    1 clove

Salt.                      To taste

Lettuce.                   3 oz

Evoo.                      1 oz  

Lime juice.                Half

**if you want it creamier add 1/2 mayo or yogurt**

Put all ingredients in blender and blend well for 2 min high speed.

1.  Place a large saute pan on high heat. add canola oil until slightly smoking point.

2. Add steak in 2 batches so you won't overcrowd and starts boiling. Saute for 4 minutes

3. Remove steak from pan and put aside including all drippings.

4. Lower heat to medium and on the same pan add canola oil and saute onion for 5 mins then add garlic and sauté for 3 min

5.  Add the rest of veggies (peppers, tomatoes and a few jalapenos) saute for 5 mins

6.  Add cooked steak, cumin, coriander, red wine vinegar and soy reduction. Mix and let it simmer for 5 min

7.  Add fries and let it cook for an additional 5 mins, so the potatoes could absorb the sauce. (covered)

8.  Check for seasoning add salt.

You could serve this dish with white rice

**But if you want to tweak it add ginger, garlic and lemongrass. **
